Peanut Butter Chocolate Chip Granola Bars

Tomorrow afternoon I'm going biking with a friend to enjoy the beautiful spring weather. We will need a snack to keep the energy up while we ride. I decided to attempt making my own homemade granola bars. I found several recipes, but this one promises to make soft, chewy granola bars that keep well. I made them tonight and of course, had to try one (or three) to see how they turned out. I love them! Perfectly crispy and chewy with a nice combination of peanut butter and chocolate. I hope they stay like this for tomorrow!

Peanut Butter Chocolate Chip Granola Bars
Inspired by Allrecipes

2 1/2 cups crispy rice cereal
2 cups quick-cooking oats
1/2 cup chocolate chips
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/2 cup smooth peanut butter
1 tsp vanilla extract

1. Grease a 9x13 inch baking dish with cooking spray.
2. In a large bowl, stir together the rice cereal, chocolate chips, and oats. Set aside.



3. Combine the brown sugar and corn syrup in a small saucepan over medium heat. Heat just until boiling, then remove from heat and stir in peanut butter and vanilla until smooth.
4. Pour over the cereal and oat mixture, and mix well.
5. Press into the prepared pan using the back of a large spoon.



6. Allow to cool, then cut into bars.



Store the bars in an airtight container to maintain their moist chewiness.

I also made another recipe of these granola bars using almond butter and subbing dried cherries and sliced almonds instead of the chocolate. They were just as delicious as the chocolate peanut butter version!
