Mini Greek Meatloaves

A while ago, I set up Google Reader with a whole bunch of blogs that I follow. As part of the Google Reader set-up, they suggest other blogs or RSS feeds that you might like and can subscribe to based on what you already follow/read. One of the suggestions was the Betty Crocker RSS feed. A daily recipe gets posted and the only way you can get them is through the feed. A lot of the recipes are desserts or mostly pre-packaged stuff, which isn't really worth writing about on here. This recipe was one that piqued my interest though.



Mini Greek Meatloaves
Adapted from Betty Crocker

Meatloaves
1 lb extra-lean ground beef
1 box (9-oz size) frozen spinach, thawed and squeezed dry
1 small onion, finely chopped
1/3 cup old-fashioned or quick-cooking oats
1/4-1/2 cup crumbled feta cheese
1 egg
2 tsp Greek seasoning
1/2 tsp garlic salt
1/4 tsp pepper

Tzatziki Sauce
1 cup Greek yogurt
1/2 medium cucumber, peeled, seeded and finely chopped
1/4 tsp salt
1 clove garlic, finely chopped

1. Heat oven to 350°F. Spray 8 regular-size muffin cups with cooking spray.
2. In medium bowl, mix meat loaf ingredients.
3. Scoop a generous 1/3 cup meat mixture into each muffin cup, pressing down slightly.
4. Bake 30 to 35 minutes or until meat thermometer inserted in center of one loaf reads 160ºF. Let stand in pan 5 minutes.



5. Meanwhile in small bowl, mix tzatziki sauce ingredients. Refrigerate until serving time.
6. Serve meat loaves with tzatziki sauce.



If I were to make these again, I'd probably do it with ground turkey instead of beef, but that's just personal preference.
